KL's HOMEMADE "DIRTY SALAD"

Here's my Homemade "Dirty Salad" recipe that I made today for lunch! Loaded with protein and plenty of essential minerals, this salad will provide lots of energy your body will need throughout the day. 

Always drink plenty of water!

Ingredients: 
Kale, 1 large fresh chopped leaf
Green Leaf Lettuce, 3 fresh cut leaves
Spinach, 1 cup fresh-picked
Cucumber, peeled & sliced
Jalapeño, sliced
Roma Tomatoes, sliced and cut
Portobellos, sliced
Hemp Seed Hearts, raw
Extra Virgin Olive Oil
Key Lime (squeezed)
Fine Sea Salt
Clove Honey
Kelp Powder

KL's ORGANIC RED QUINOA AND SLOW-COOKED GREENS

Here's a recipe pic that I posted on my Instagram but didn't post on the blog... probably because I "move too fast!"

It's slow cooked kale and mustard greens with yellow onions seasoned with coconut oil, cayenne pepper, onion powder and sea salt along with organic red quinoa next to a sliced tomato.

The red quinoa cooks up so fluffy in under 20 minutes and it tastes so good plain or when I add a dash of sea salt and pepper (I usually mix the quinoa into the greens as I eat).

The big fresh-cut vine ripe tomato was dashed with fresh herbs to compliment the tender slow-cooked greens!

KL's ANTI-PARASITIC TEA BREW


Parasites can live over 60 years inside the human body... even longer.

So here's a recipe that I recommend that you take two (2) times daily for 3-5 days while on a raw food meal plan.

HERBAL INGREDIENTS:
Peppermint
Wormwood
Cat's Claw Bark
Lavender
Chamomile
Meadowsweet
Chapparral
Slippery Elm
Licorice Root
Ginger Root
Gotu Kola  
Cloves

PREP:
Seek out the nearest health food or natural herb store with the following herbs and blend the above mentioned herbs into a mix.

Pick up a couple of mesh tea bags (pictured below) if you live the FAST life and you're always on the go like me---they will come in handy for brewing at work or school plus, it's time-saving!

BREW:
Use 1 teaspoon per serving. Simmer in distilled water and brew for ten (10) minutes, strain and pour. Add organic Raw Blue Agave or 100% Grade B Maple Syrup to sweeten.

KL's RAW ALMOND SNACK

Raw Almonds are my favorite snack food---and I've made some FAST & EASY healthy all-natural recipes along my journey to perfect health that smashes my desire for something "sweet" and/or something "salty" with a little spice kick every single time... that is GOOD and GOOD FOR THE BODY all at the same time!


PREP TIME: 3 MIN
COOK TIME: 0 MIN

INGREDIENTS:

RAW ALMONDS
CAYENNE PEPPER
100% SEA SALT
GROUND CINNAMON
RAW SESAME SEEDS (OPTIONAL)
ORGANIC RAW BLUE AGAVE NECTAR


PREP:

In a bowl, pour the desired amount of raw almonds into it and add small amounts of agave nectar while stirring until the almonds are evenly covered.

Add a dash of the cayenne pepper on top---a little bit goes a long way. Then sprinkle sea salt (until desired). Add a dash of the ground cinnamon, then top with the raw sesame seeds (optional), or try it without the sesame seeds!




VROOOOOOOOOOM---I'm GONE---ENJOY!!

KL's CHAMPAGNE MANGO MIXED BERRY ALMOND MILK SHAKE

Yeaaaaaaaaa BABBBBBY!!

It is was it IS---FAST to make, DAIRY-FREE, ALL-NATURAL, [CANE] SUGAR-FREE & SUPPPPER DELICIOUS!!


I made fresh almond milk the other day and with a cup or so left over today, I made a "milk shake" by adding to it: a champagne mango, handful of blueberries, 5 or 6 strawberries, half a burro banana, half a handful of walnuts halves, and a big squeeze of organic raw blue agave nectar!

PREP TIME: 10 MIN
COOK TIME: 0 MIN

INGREDIENTS:

1 CUP FRESH ALMOND MILK (SEE MY ALMOND MILK RECIPE)
1 CUP BLUEBERRIES
1 CUP STRAWBERRIES
1 TABLESPOON ORGANIC RAW BLUE AGAVE NECTAR
1/2 BURRO BANANA, SMALL, PEELED & CHOPPED (OPTIONAL)*
1/2 CUP WALNUT HALVES (OPTIONAL)*


PREP:

Add mango, blueberries and strawberries to the milk in a blender and pulse until smooth. 
Place entire container in freezer for 10-20 minutes then add walnuts, agave, and banana then pulse until it becomes a "milk shake" consistency!

VROOOOOOOOOM!!!

KL'S YELLOW BELL PEPPER FRIES





WoOoOoO00!!


I've done it again---challenged myself to a FAST (& fried) meal that's totally guilt-free, haha!!


PREP TIME 10 MIN
COOK TIME 4-7 MIN


SERVES 2


INGREDIENTS:


YELLOW BELL PEPPER(s)
100% WHOLE SPELT FLOUR
SEA SALT
CAYENNE PEPPER
BASIL
THYME
ONION POWDER
EXTRA-VIRGIN OLIVE OIL


PREP:


HEAT OLIVE OIL IN A SMALL TO MEDIUM SIZE PAN.


WASH & SLICE BELL PEPPERS AS YOU WOULD "FRENCH FRIES" THEN SOAK IN PURE WATER WITH A DASH OF THYME. 


IN A MEDIUM BOWL BOWL (FOR YOUR FRY BATTER), ADD  SPELT FLOUR AND A DASH OF THE FOLLOWING: SEA SALT, CAYENNE PEPPER, BASIL, & ONION POWDER.


BATTER THE BELL PEPPERS & FRY IN OLIVE OIL FOR 4 MINUTES (LONGER FOR A CRISPIER TASTE) TURNING HALF-WAY THROUGH COOKING TIME.


BOOM---ENJOY!!

KL'S "ANCIENT-ANCESTOR" STYLE CHICKPEA & KAMUT SOUP

Chickpea soup seem to call out for herbs & spices in the winter, so that's what they get here baby! I make this soup really chunky, hearty and totally packed with love & flavor that help me get in-tune with my ancient-ancestral side!!




Ingredients

  • extra-virgin olive oil
  • yellow onion, medium diced
  • ground cinnamon
  • ground sage 
  • dashes of cayenne pepper
  • bay leaves
  • chopped roma tomatoes
  • 1 cup organic chickpeas---soaked for 6-8 hours in water. (3 cups cooked) 
  • 1 cup organic kamut---soaked for 6-8 hours in cold water. (3 cups cooked) 
  • 1 quart water
  • sea salt
  • okra, cut
  • bell pepper
  • french string beans (optional)

Directions

Heat water in a large pot over medium-high heat. Add chickpeas, onion and bay leaves. Bring to a boil, cover and slow-cook (simmer) for 1.5 hours with top of pot vented (to slow evaporation).
In a separate pot, bring 3 cups water (and sea salt---if desired) to a boil then add kamut grains. Return to a boil, cover and reduce heat to a simmer and cook for 45-60 minutes until grains are chewy & fluffy.

Back to the chickpeas---remove soup from heat. Use a potato masher (or fork) to mash up some of the chickpeas right in the pot. Stir in the spices and extra virgin olive oil, cut okra, roma tomatoes, chopped bell pepper, a couple pinches of sea salt, cooked kamut and stir well. Heat through slowly 15-20 minutes.
Season again, to taste, with sea salt.
Serve this soup hot out the POT---BOOM!!

KL'S FRENCH STRING BEANS & SAUTEED MUSHROOMS & ONIONS

HAPPY HEALTHY NEW YEAR!!!


I've been busting my tail working overtime throughout the holiday season so I've had only time for quick, nutritional meals and little sleep!


This is a FAST and healthy favorite [even on a low budget], that's fully-loaded with nutrients that the body can use!


All that is needed is a pot with a lid, a dash of Extra Virgin Olive Oil & Sea Salt to simmer the string beans (add sliced Yellow Onions for extra flavor), and a sautee pan with hot Extra Virgin Olive Oil to sautee the sliced Baby Bella Mushrooms & Yellow Onions for a few minutes over a hot flame!


Herbs that I use to season my mushrooms/onions dish include: basil, bay leaves, ceyanne pepper, thyme, and marjoram.


*add herbs and spices to season the dish to your tastes & liking!

KL'S SAUTEED MUSHROOMS & ONIONS WITH HERBS


A quick dish that is loaded with Vitamin D, Calcium, & Phosphorus!


Ingredients:
Bay Leaves - dash
Sea Salt - 1/2 teaspoon
Thyme - 1/4 teaspoon
Cayenne Pepper - 1/2 teaspoon
Extra Virgin Olive Oil -
Yellow Onion (chopped) - 1/4 cup
White Mushrooms (chopped) - 1-2 cups


Prep:
Pre-heat non-stick skillet with Extra Virgin Olive Oil


Cook:
Add Mushrooms and Onions then add herbs.
Sautee for 3-5 minutes and serve hot.


*I've added chopped organic Avocado because I had one in the fridge! (totally optional) =]

KL'S BLACK-BERRY POWERFUL SMOOTHIE

This Saturday I'll be on the go early and on my feet all day so I wanted to make a quick & healthy breakfast smoothie since I slept in a bit longer instead of my usual morning workout!


Here's all I put together:
1 cup of 100% 'Not From Concentrate' Orange Juice
1 cup of fresh Blackberries
2 squeezed Key Limes (juice & seeds)
1 teaspoon of 100% Grade B Maple Syrup
1 Blender
1 Motivational Song (optional, but highly recommended, haha!)



Pour the OJ first into blender then follow up with all of the other ingredients. Blend on high for about one minute, or until it is a puree (as blackberry seeds are very small), pour into a tall glass and...BOOM---YOU'RE DONE!!
That's FAST and HEALTHY =]

SPELT FLAKES CEREAL WITH BLACKBERRIES & WALNUTS

For breakfast today, I cooked up this healthy organic hot breakfast cereal and decided to throw in some fresh blackberries that I caught on sale at Dierberg's family market & walnut pieces! It's a great meal to kick off a chilly morning if you have a busy day ahead of you!
Made with 100% spelt grains, walnuts, and natural fruit, this meal produces a strong immune body & will not slow you down... so it is the perfect meal for my FAST lifestyle!


Ingredients: 
2 cups water
1 cup organic spelt flakes (roasted and rolled)
6-10 fresh blackberries
1 handful of walnut pieces1 chunk of course Pink Himalayan Sea Salt
1 teaspoon organic Raw Blue Agave Nectar (optional as sweetner)


Tools:
Saucepan
Knife
Spoon


1. Bring 2 cups water & your pinch of pink Himalayan sea salt to a boil.
2. While waiting on your water to boil, now is the perfect time to rinse the blackberries, we'll add them after the hot cereal is finished.
3. Once the water is boiling, add your 1 cup of spelt flakes, stir, and cook at least 3 minutes (I usually cook my spelt flakes about 4 minutes).
4. Slowly drain any unwanted remaining water and add your 1 teaspoon of agave sweetener and stir, then and blackberries and top with walnut pieces... wallah, all done!
5. Enjoy =)

BOOK: THE POWER OF NOW

My big brother, L told me to check out this book by Eckhart Tolle, titled, THE POWER OF NOW.
I live a FAST lifestyle yet always seeking knowledge, personal growth, and enlightenment. 
Reading just the inside flap on the hardcover sleeve of this book, I was hooked! 
No need to spoil the book by giving too many details in this blog post, but if you've been living with stress, disease, unhappiness, fear, a painful past, etc. then this book will jump start your engine & get you back on the road to living in the NOW & focusing on what's most important to get your life back in balance!
This tome is a easy read and not just for the spiritual minds but will uplift your spirits!

KL's SUPER GREEN'S SMOOTHIE

This recipe may sound a bit crazy but trust me, it's GOOOOD; and it's quick, healthy, and easy to make since I live The FAST Life!

Believe it or not, kale and romaine will blend up perfectly into a smoothie.

I added green apple, fresh squeezed orange juice, organic raw blue agave syrup, and raw almond butter too. It doesn't even taste like you're drinking kale and romaine!

Here's what you need to make this quick recipe:
Tools: 
blender, teaspoon, knife

Ingredients:
1 fistful chopped kale leaves
1 fistful chopped romaine leaves
1/2 green apple cut into pieces
1 1/2 cups fresh-squeezed cold orange juice *(not from concentrate) or use 1 1/2 cups almond milk

1 teaspoon organic raw raw blue agave syrup
1 tablespoon raw almond butter

In a blender, combine kale, romaine, and orange juice. Blend until no big bits remain. Stop blender and add apple pieces, raw almond butter, and organic raw blue agave syrup. Blend until smooth. Pour in a tall glass and enjoy immediately!
