IF YOU'VE FOLLOWED MY BLOG, YOU MUST KNOW THAT I MAKE MULTIPLE-MEAL FOODS, WHICH IS CONSISTENT WITH LIVING FAST & ON THE GO!
SO THIS STUFFED RED BELL PEPPER IS WHAT I MADE FOR DINNER WITH THE LEFT-OVER CHICKPEAS FROM THE PREVIOUS POST...
PREP TIME: 50 MIN
COOK TIME: 10 MIN
SERVES 1-2
INGREDIENTS:
RED BELL PEPPER
ORGANIC WILD RICE - 1/2 CUP UNCOOKED
YELLOW ONION - DICED
ORGANIC CHICKPEAS
SEA SALT - DASH (OR TO TASTE)
CAYENNE PEPPER - DASH (OR TO TASTE)
THYME - DASH (OR TO TASTE)
CUMIN - DASH (OR TO TASTE)
BASIL - DASH (OR TO TASTE)
ONION POWDER - DASH (OR TO TASTE)
ORGANIC GINGER - DASH (OR TO TASTE)
EXTRA-VIRIGN OLIVE OIL - 2 TABLESPOONS
PREP (IF USING ALREADY PREPARED CHICKPEAS):
BOIL 1/2 CUP WILD RICE IN 1 1/2 CUPS SPRING WATER (COVERED) FOR 45 MINUTES OR UNTIL SOFT & FLUFFY---WATER SHOULD BE ABOUT 90% EVAPORATED.
PRE-HEAT OVEN TO 325 DEGREES.
WASH & CUT THE THE TOP OFF OF BELL PEPPER (REMOVE PIT, BUT KEEP SEEDS!!!).
SAUTE WILD RICE, CHICKPEAS, DICED YELLOW ONION, BELL PEPPER SEEDS, AND SPICES IN 2 TABLESPOONS OLIVE OIL FOR 3-5 MINUTES.
OVER-STUFF BELL PEPPER(S) AND PUT THE TOP BACK ON.
PLACE IN OVEN-SAFE DISH AND PUT INTO THE OVEN FOR 8-10 MINUTES, REMOVE & ENJOY!!
VROOOOOOOOOM!!
