KL's HUMP DAY MUNCHIES SNACK

Make a healthy snack like this one when you have the munchies and you won't feel so guilty afterwards, haha!

Toasted organic spelt bread (French Meadows) with 100% Almond Butter spread over it, 1 organic banana sliced and halved, a dash of sea salt, and a few shakes of ground cinnamon on top is all that is needed to satisfy your taste buds :)

Prep time: 5 min
Cook time: 3 min

Serves: 2


Ingredients:
French Meadows Spelt Bread (2 slices)
Pure Almond Butter
Organic Banana (1, cut in quarters)
Sea Salt (dash)
Ground Cinnamon (dash)

KL's CHICK-IN SPELT SOFT TACO

If you've never had chickpeas, you better get hip real FAST!

It's the main ingredient in "hummus" and it's a great source of protein and fiber for those who lack it in their daily nutrition.

The spelt wraps were purchased at Whole Foods Market and contain all natural ingredients and no corn syrup or additives!

Ingredients:
Chickpeas (garbanzo beans)
Baby Bella mushrooms
Yellow onion
Roma tomato
Red Leaf lettuce
Spelt flour wrap (organic)
Chives
Basil
Cayenne pepper
Sea salt


Prep:
The chickpeas were slow cooked with yellow onion and bay leaves for 2 hours.

Next, in a small saucepan, the chickpeas and [well-rinsed] mushrooms were heated together for 5 minutes with the flavorful seasonings (chives, basil, cayenne, onion powder, sea salt) to create the "meat" of the taco/burrito/wrap (which ever you prefer to make). 

Strain any excess liquid so that it doesn't make your taco messy as you're eating it, or mash it up a little with a spoon our fork to make the "meat" easier to handle... if you're a rookie!

The spelt wrap was warmed on the open gas range for 30 seconds, constantly flipped every 5 or so seconds to prevent over cooking or burning.

Fresh cut vegetables for toppings of your choice makes this meal more memorable as I chose red leaf lettuce and Roma tomato for my CHICK N taco, whoooooo!

KL's FRIED ZUCCHINI CHIPS WITH TOMATILLO SALSA

Tonight I pan-fried a peeled & sliced garden-grown zucchini in 100% pure Grape Seed Oil... and it was sOoO delicious!!

The "batter" was simply Organic Whole Spelt Flour and herbs (Thyme, Onion Powder, Cayenne Pepper, Basil and Sea Salt).

PREP: 6 MIN
COOK: 3-4 MIN

SERVES: 2

INGREDIENTS:
Zucchini
Cayenne Pepper
Sea Salt
Basil
Thyme
Whole Spelt Flour
Onion Powder
100% Grape Seed Oil

PREP:
Batter---Mix 1/2 cup Spelt Flour with 1 tablespoon Onion Powder, 1 teaspoon Cayenne Pepper, and 1 teaspoon Sea Salt, and a dash of basil and thyme.
Rinse & peel zucchini and slice into chips.
Heat Grape Seed oil in small pan on medium heat.
Add batter to a re-sealable bag and add zucchini then seal. Shake well until zucchini is well battered then remove and add to hot oil.

COOK:
Cook the zucchini 3 minutes or until all floats at the top of the cooking oil---since we're using Whole Spelt Flour in this recipe, the batter should be just slightly darker than golden brown when ready!

Remove from oil and place on a napkin to drain excess oil from cooked zucchini and dash with Sea Salt (optional).

SALSA:
1/2 Roma Tomato, fresh
1 Tomatillo, fresh
Sea Salt, dash
Onion, fresh cut (teaspoon) or Powder, dash
Thyme, dash
Cayenne Pepper, dash
Crushed Red Pepper, dash

PREP:
Blend in Ninja Blender or food processor for 10 seconds.

KL'S HOME-MADE ORGANIC ONION RINGS

TRY THIS FAST & GUILT-LESS RECIPE AND YOU'LL IMPRESS YOURSELF---I SURE DID!!

PREP TIME: 10 MIN
COOK TIME: 10 MIN
SERVES: 1

INGREDIENTS:

1, ORGANIC YELLOW ONION
.5 CUP, ORGANIC SPELT FLOUR
.5 TEASPOON, CAYENNE PEPPER
.25 TEASPOON, SEA SALT
.5 TEASPOON, ONION POWDER
DASH, BASIL
1 CUP*, EXTRA VIRGIN OLIVE OIL

PREP:

HEAT OLIVE OIL IN A SMALL TO MEDIUM PAN ON MEDIUM HEAT.
ADD 1/2 CUP SPELT FLOUR, SEA SALT, CAYENNE, & ONION POWDER TO A SMALL BOWL WITH A LID (ADD SEASONING TO YOUR TASTE AND LIKING) AND MIX WELL.
SLICE YELLOW ONION AND SOAK IN COLD WATER UNTIL READY TO USE.

ADD ONIONS TO MIX AND SHAKE UNTIL COATED WITH BATTER AND COOK IN HEATED OLIVE OIL 3-4 MINUTES UNTIL GOLDEN.

REMOVE FROM OIL AND PLACE ON CLOTH OR PAPER TOWEL TO REMOVE EXCESS OIL, SPRINKLE WITH A DASH OF SEA SALT & BASIL.

THEY TASTE GOOD ENOUGH TO EAT WITHOUT KETCHUP OR SAUCE!!

WoOoO---THAT'S ALL FOLKS!!!

KL'S BIG BELLA MUSHROOM BURGER ON TOASTED SPELT BREAD

WoOoO!!
If you've never had a Portabello Mushroom BURGER, you're definitely missing out on good eating that's good for you!

In this SUPER FAST - SUPER FOOD recipe, I've added lots of raw fresh toppings with seasonings to set this BURGER off right!!

PREP: 10 MIN
COOK: 6-8 MIN

INGREDIENTS:

PORTABELLO MUSHROOM - CAP
AVOCADO - SLICE(S)
YELLOW ONION - SLICED & GRILLED
GREEN LEAF LETTUCE - LEAVES
ROMA TOMATO - SLICED
BASIL
THYME
SEA SALT
CAYENNE PEPPER
EXTRA VIRGIN OLIVE OIL
SPELT BREAD (TOASTED)

Pre-Heat non-stick pan on medium heat with a teaspoon of olive oil. Rinse and clean mushroom(s), pat dry, sweep with olive oil and add a dash of sea salt, basil, cayenne pepper, thyme to both sides.
Place mushroom(s) in heated pan along with slices of yellow onion.
Cover pan with lid to lock in the flavor and keep the mushroom(s) juicy. Cook for 3-4 minutes on each side.
All that's left to do is prep your topping(s) listed above and toast your spelt bread!

BOOM---all done!!

SPELT ROTINI PASTA WITH SPINACH & RAW SESAME SEEDS

Here's a FAST recipe that I forgot to post... I was going through my photo gallery and discovered this meal was soooo firrrrre!


Since it is Spelt Rotini Pasta, you can refer to any one of my spelt recipes then add spinach greens with fresh chopped onions and your favorite seasonings (like Basil, Onion Powder, Ceyanne pepper, sea salt) to the mix for a quick fix side dish!

5-MINUTE ORGANIC BREAKFAST MEAL

Today, I whipped up this healthy organic hot breakfast cereal in about 5 minutes, and that's stretching it a bit. Plus, its inexpensive and a great meal to jump start a busy day.
Made with 100% whole grain and natural fruit, it produces a strong body & healthy blood... the perfect meal for my FAST lifestyle!


Ingredients:
2 cups water
1 cup organic spelt flakes (roasted and rolled)
1 organic gala apple
1 pinch of pink Himalayan sea salt
1 teaspoon organic raw blue agave nectar (optional)


Tools:
Saucepan
Knife
Spoon


1. Bring 2 cups water & your pinch of pink Himalayan sea salt to a boil.
2. While waiting on your water to boil, now is the perfect time to cut your gala apple into small bite-sized chuncks (gala apples are great because they break down easy in heat & are easily digested) and put to the side, we'll add them after the hot cereal is finished.
3. Once the water is boiling, add your 1 cup of spelt flakes, stir, and cook at least 3 minutes (I usually cook my spelt flakes about 4 minutes).
4. Slowly drain any unwanted remaining water and add your 1 teaspoon of agave sweetener and your gala apple chunks, stir and wallah, all done!
5. Enjoy as is, or add a piece of fresh fruit (peach shown) on the side! =)

"SS" PANCAKES

"SS" doesn't mean 'Super Sport' or 'Sirkle Sity' (this time)... It stands for "SUPER SPELT!"

I woke up shortly after 5am this morning, took some herbs (Viento and T1), did a quick workout and hit the shower. With success and breakfast on my mind, I decided to whip up big pancakes for breakfast since I have a long day of training classes ahead of me.

Breakfast is a very important meal. I start the day with healthy, natural, nourishing food that will fill me up and get my day off to a great start!

So here's what I did, I got:
1 1/2 cups whole spelt flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1 1/4 cups milk water
2 tablespoons vegetable oil
1 teaspoon raw almond butter
1 banana (mashed and stirred)

Preheat stove top and non-stick pan on med-high setting. In a large mixing bowl, combine all dry ingredients. Once fully combined, mix in remaining wet ingredients until combined. Mix until batter is mostly smooth and lump free (depending on how mashed the banana is). If batter is too thick, add water a tablespoon at a time until it reaches desired consistency.

Once your stove top and the non-stick pan is ready, use olive oil to coat the non-stick pan. Pour just enough batter to form a pancake of the desired size.
Watch pancake closely, when the batter starts to bubble and the center does not look very 'gooey', and the edges are just brown, it's time to flip the pancake over babe! Cook for approximately 2 more minutes.

Serve warm with organic grade B maple syrup, and/or 100% fruit topping (ex. strawberry, blueberry, raspberry). 

Straight firrrrre!
